Two local sheep breeds were studied: the Canarian and the Canarian Haired. Animals were intensively reared. Two slaughter weights were considered (15 and 24 kg live weight). Correlations among carcass tissue percentage and tissue percentage in the seven joints in the left halfcarcass were obtained. Equations were obtained to predict carcass tissue composition using most correlated joints. Ribs was the best predictor joint of muscle and fat. Leg was the best predictor of bone.
